Whimsical cakes reflect docent's passion for the zoo
Marianne Hailey loves being a docent at the St. Louis Zoo so much that she's taken to creating menageries of her own — on cakes.
Hailey took up cake decorating only recently.
"It was a year ago during winter and I was bored," she says. "I saw an ad for cake decorating classes."
She took six classes at the Arnold Hobby Lobby and got hooked.
"I started making them for friends just to practice," she says. "My regular shift at the zoo is Monday afternoon, and whenever there was a birthday, I started bringing in cakes. After a while we designated the first Monday of each month to celebrate the birthdays in our section, and I'd come up with a different cake each month."
She got more and more proficient at making animals out of fondant, a thick sugar paste that can be used to ice or otherwise decorate cakes.
"I usually can just look at a picture or watch a YouTube video and get an idea on how to make things," she says. "I found out that I just really enjoy doing it. I started experimenting and got into fondant lions, tigers, elephants and giraffes — and the penguins, of course."
Each penguin, for example, takes 15 minutes to build. For a penguin cake, she baked a cake as a base, and an igloo made from a cake baked in a small bowl and covered with fondant. The entrance to the igloo is made of a thin piece of cardboard in an arc-shaped and covered with fondant. The lines of these pieces are made using a tool quilt decor.
"If I know I make animals or other extra things for a cake, I make them in advance," she said.
Hailey had developed an affinity for the zoo where live near Scott Air Force Base more than 20 years. She moved from Austin, Texas, to St. Louis in 2006 when her husband took a job with the St. Louis Metropolitan Police Department. "I'd worked as a nurse in a neurology office and decided to cut back to part time," she says. "Then my husband got a job here, and it was a very fast move. I decided to retire completely. I loved the zoo so much that I became a volunteer and later became a docent."
She loves to travel and to play golf, but her increasingly elaborate cakes have kept her clubs mostly in the bag this summer.
"I just love doing this," she says. "I'm really so grateful to my instructor, Mona Sanchez.
